38g Protein Chicken Enchiladas with Dreamy White Sauce

  • 2 cups shredded cooked chicken
  • 1 cup low-fat cream cheese
  • 1 cup shredded mozzarella cheese
  • 1 teaspoon garlic powder
  • 1 teaspoon onion powder
  • 1 teaspoon cumin
  • 8 corn tortillas
  • 1/4 cup chopped fresh cilantro

Instructions

  1. Preheat the oven to 350°F (175°C).
  2. In a large bowl, mix the shredded chicken, cream cheese, mozzarella, garlic powder, onion powder, and cumin until well combined.
  3. Lightly warm the tortillas to make them easier to roll.
  4. Fill each tortilla with the chicken mixture and roll tightly.
