BBQ Chicken & Roasted Sweet Potato Bowls

  • 2 medium sweet potatoes
  • 1 tablespoon olive oil
  • 1 teaspoon salt

  • 1/2 cup BBQ sauce

Instructions

  1. Preheat the oven to 400°F (200°C).
  2. Peel and cube the sweet potatoes, then toss with olive oil, salt, and pepper.
  3. Spread the sweet potatoes on a baking sheet and roast in the oven for 25-30 minutes.
  4. While the sweet potatoes are roasting, grill or bake the chicken breasts until they are cooked through.
  5. Brush the cooked chicken with BBQ sauce and let it cook for an additional 5 minutes.
