Ingredients

  • 2 tablespoons olive oil
  • 1 medium onion, chopped
  • 2 cloves garlic, minced
  • 4 cups fresh tomatoes, chopped
  • 1 teaspoon dried basil
  • 2 cups vegetable broth
  • 1 can (14 oz) coconut milk
  • Salt and pepper to taste

Instructions

  1. Heat olive oil in a large pot over medium heat.
  2. Add onion and garlic, sauté until soft.
  3. Stir in tomatoes and dried basil, cook for 5 minutes.
  4. Add vegetable broth, bring to a boil, then reduce heat and simmer for 10 minutes.
