  • 2 tablespoons olive oil
  • 1 onion, chopped
  • 2 garlic cloves, minced
  • 4 cups vegetable broth
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1/2 teaspoon nutmeg
  • 1/2 cup coconut milk

Instructions

  1. Preheat your oven to 400°F (200°C).
  2. Cut the butternut squash in half, scoop out the seeds, and drizzle with olive oil. Place cut side down on a baking sheet.
  3. Bake for 30-40 minutes, or until soft.
  4. In a pot, sauté the onion and garlic until translucent.
  5. Once the squash is cool, scoop the flesh into the pot with the onion and garlic.
  6. Add vegetable broth, salt, pepper, and nutmeg. Simmer for 10 minutes.
  7. Blend the soup until smooth, then stir in coconut milk.
  8. Serve warm and enjoy!
