- 1 medium butternut squash
- 2 tablespoons olive oil
- 1 onion, chopped
- 2 garlic cloves, minced
- 4 cups vegetable broth
- 1 teaspoon salt
- 1/2 teaspoon black pepper
- 1/2 teaspoon nutmeg
- 1/2 cup coconut milk
- Preheat your oven to 400°F (200°C).
- Cut the butternut squash in half, scoop out the seeds, and drizzle with olive oil. Place cut side down on a baking sheet.
- Bake for 30-40 minutes, or until soft.
