  • 1/2 teaspoon ground nutmeg
  • 1/2 teaspoon salt
  • 1 cup granulated sugar
  • 1/2 cup brown sugar
  • 1 cup pure pumpkin puree
  • 1/2 cup vegetable oil
  • 3 large eggs
  • 1 teaspoon vanilla extract
  • 1 cup chopped pecans

Instructions

  1. Preheat the oven to 350°F (175°C).
  2. In a bowl, whisk together flour, baking soda, baking powder, cinnamon, nutmeg, and salt.
  3. In a separate large bowl, mix the granulated sugar, brown sugar, pumpkin puree, oil, eggs, and vanilla until well combined.
  4. Gradually add the dry ingredients to the wet ingredients and stir until just combined. Fold in the chopped pecans.
  5. Pour the batter into a greased loaf pan and smooth the top.
  6. Bake for 60-70 minutes or until a toothpick comes out clean.
  7. Allow to cool before adding the maple glaze.
