  • 1/2 teaspoon baking powder
  • 1 teaspoon ground cinnamon
  • 1/2 teaspoon ground nutmeg
  • 1/4 teaspoon salt
  • 1 cup chocolate chips

Instructions

  1. Preheat the oven to 350°F (175°C) and line a muffin tin with liners.
  2. In a large bowl, mix together the pumpkin puree, brown sugar, granulated sugar, vegetable oil, eggs, and vanilla extract until smooth.
  3. In another bowl, whisk together the flour, baking soda, baking powder, cinnamon, nutmeg, and salt.
  4. Gradually add the dry ingredients to the pumpkin mixture, stirring just until combined.
  5. Fold in the chocolate chips.
  6. Divide the batter evenly among the muffin cups and bake for 18-20 minutes, or until a toothpick inserted into the center comes out clean.
  7. Allow to cool in the pan for a few minutes, then transfer to a wire rack to cool completely.

Notes

  • For extra flavor, add a sprinkle of pumpkin pie spice to the batter.
  • These muffins can be frozen for up to 3 months.
