Blueberry Breakfast Quesadilla

A delicious and quick breakfast option featuring fresh blueberries and melted cheese in a crispy tortilla.

  • 1 cup fresh blueberries
  • 2 large flour tortillas
  • 1 cup shredded mozzarella cheese
  • 1 tablespoon honey
  • 1 tablespoon butter

Instructions

  1. In a bowl, mix the blueberries with honey.
  2. Heat a skillet over medium heat and melt the butter.
  3. Place one tortilla in the skillet and sprinkle half of the cheese on top.
  4. Add the blueberry mixture over the cheese, then sprinkle the remaining cheese on top.
  5. Top with the second tortilla and cook until golden brown, about 3-4 minutes.
  6. Flip and cook the other side until golden and the cheese is melted.
  7. Remove from skillet, slice, and serve warm.

Notes

  • For added flavor, consider adding a pinch of cinnamon.
