  • 2 tablespoons olive oil
  • 1 onion, diced
  • 3 cloves garlic, minced
  • 1 teaspoon Cajun seasoning
  • 1 teaspoon ground cumin
  • 1 can (15 oz) white beans, drained and rinsed
  • 4 cups chicken broth
  • 1 cup corn, frozen or canned
  • 1 bell pepper, chopped
  • 1/2 cup cream cheese
  • Salt and pepper to taste

Instructions

  1. In a large pot, heat olive oil over medium heat. Add onion and garlic, sautéing until softened.
  2. Stir in Cajun seasoning and cumin, cooking for another minute.
  3. Add chicken breasts and cook until browned on all sides.
  4. Pour in chicken broth and bring to a boil. Reduce to a simmer and add white beans and corn.
  5. Cook for 20-25 minutes, or until chicken is cooked through. Remove chicken, shred it, then return to the pot.
  6. Stir in cream cheese until melted and combined. Season with salt and pepper.
