  • 1/2 cup unsweetened cocoa powder
  • 1 cup granulated sugar
  • 1/2 cup unsalted butter, softened
  • 2 large eggs
  • 1/2 cup milk
  • 1 teaspoon vanilla extract
  • 1 teaspoon baking powder
  • 1/4 teaspoon salt
  • 1/2 cup crushed candy canes

Instructions

  1. Preheat the oven to 350°F (175°C) and line a cupcake pan with liners.
  2. In a large bowl, cream together the butter and sugar until light and fluffy.
  3. Add the eggs one at a time, mixing well after each addition.
  4. Stir in the milk and vanilla extract.
  5. In another bowl, whisk together the flour, cocoa powder, baking powder, and salt.
  6. Gradually add the dry ingredients to the wet ingredients, mixing just until combined.
  7. Fold in the crushed candy canes.
  8. Divide the batter evenly among the cupcake liners.
  9. Bake for 18-20 minutes or until a toothpick inserted comes out clean.
  10. Allow to cool before frosting.

Notes

  • For extra candy cane flavor, add peppermint extract to the frosting.
  • These cupcakes can be decorated with whipped cream and additional crushed candy canes on top.
