  • 1 cup orzo pasta
  • 1/2 cup grated Parmesan cheese
  • 1/4 cup fresh parsley, chopped
  • 1 teaspoon garlic powder
  • 1 teaspoon onion powder
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • 1 egg
  • 2 tablespoons olive oil
  • 2 cups chicken broth
  • 1 can diced tomatoes

Instructions

  1. Preheat your oven to 400°F (200°C).
  2. In a bowl, mix together the ground chicken, Parmesan cheese, parsley, garlic powder, onion powder, salt, pepper, and egg until well combined.
  3. Form the mixture into meatballs, about 1 inch in diameter.
  4. Heat olive oil in a skillet over medium heat and brown the meatballs on all sides.
  5. Add chicken broth and diced tomatoes to the skillet and bring to a simmer.
  6. Add the orzo and stir to combine.
  7. Transfer everything to a baking dish and bake for 25 minutes.
