  • 2 cups celery, diced

  • 1 teaspoon dried rosemary
  • 1/2 cup all-purpose flour
  • 4 cups chicken broth
  • 2 cups cooked chicken, shredded
  • 1 cup heavy cream
  • 1 cup frozen peas
  • 2 teaspoons salt
  • 1 teaspoon black pepper

Instructions

  1. In a large pot, heat olive oil over medium heat.
  2. Add onions and garlic, and sauté until softened.
  3. Add carrots, celery, thyme, and rosemary; cook for about 5 minutes.
  4. Sprinkle in the flour and stir to combine, cooking for 2 minutes.
  5. Gradually pour in the chicken broth, whisking to avoid lumps.
  6. Bring the mixture to a simmer, then add the chicken and heavy cream.
  7. Stir in the peas, salt, and pepper; cook for another 10 minutes.
  8. Serve hot with your choice of bread.

Notes
