  • 1/2 cup sugar
  • 1/2 cup unsalted butter, softened
  • 2 eggs
  • 1/2 cup milk
  • 2 tsp baking powder
  • 1 tsp vanilla extract
  • 1 tbsp cinnamon
  • 1/4 cup brown sugar

Instructions

  1. Preheat the oven to 350°F (175°C) and line a muffin tin with cupcake liners.
  2. In a bowl, cream together the butter and sugar until light and fluffy.
  3. Add the eggs, one at a time, mixing well after each addition.
  4. Stir in the milk and vanilla extract.
  5. In a separate bowl, combine the flour and baking powder.
  6. Gradually add the dry ingredients to the wet mixture, stirring until just combined.
  7. In another bowl, combine the brown sugar and cinnamon.
  8. Fill each cupcake liner with half of the batter, sprinkle with the cinnamon sugar mixture, then top with the remaining batter.
  9. Bake for 18-20 minutes or until a toothpick inserted comes out clean.
  10. Let cool before frosting.

Notes

  • For added flavor, consider adding a cream cheese frosting on top.
  • These cupcakes are best enjoyed fresh, but can be stored for a couple of days.
