- 3 ripe bananas
- 1/3 cup melted butter
- 1 teaspoon baking powder
- 1 teaspoon baking soda
- 1/4 teaspoon salt
- 1 teaspoon vanilla extract
- 1 teaspoon ground cinnamon
- 1 cup sugar
- 2 large eggs
- 1 1/2 cups all-purpose flour
- 1/2 cup chopped walnuts (optional)
- Preheat the oven to 350°F (175°C).
- In a mixing bowl, mash the bananas and mix with melted butter.
- Stir in the sugar, eggs, and vanilla extract until smooth.
- Add the baking powder, baking soda, salt, and cinnamon, mixing well.
- Gradually add the flour until just combined. Fold in the walnuts if using.
- Pour half of the batter into a greased loaf pan, sprinkle with cinnamon sugar, and then pour the remaining batter on top.
- Bake for 60-65 minutes or until a toothpick comes out clean.
- Let cool before serving.
