Creamy Tuscan Shrimp Orzo

A rich and creamy dish that combines succulent shrimp with orzo pasta and a blend of Tuscan flavors.

  • 8 ounces orzo pasta
  • 1 pound shrimp, peeled and deveined
  • 2 tablespoons olive oil
  • 3 cloves garlic, minced
  • 1 cup cherry tomatoes, halved
  • 1 cup heavy cream
  • 1/2 cup grated Parmesan cheese
  • 2 cups spinach, wilted
  • 1 teaspoon Italian seasoning
  • Salt and pepper to taste

Instructions

  1. Cook orzo according to package instructions. Drain and set aside.
  2. In a large skillet, heat olive oil over medium heat. Add garlic and sauté until fragrant.
  3. Add shrimp and cook until pink and opaque, about 3-4 minutes.
  4. Stir in cherry tomatoes and cook for another 2-3 minutes.
  5. Lower heat and add the heavy cream and Parmesan cheese, stirring until smooth.
  6. Add wilted spinach and Italian seasoning, season with salt and pepper.
  7. Combine the cooked orzo with the sauce, mixing well.
  8. Serve hot, garnished with additional Parmesan and fresh herbs if desired.

Notes

  • For added flavor, consider using sun-dried tomatoes.
  • Can substitute heavy cream with half-and-half for a lighter version.
