Cucumber Pasta Salad

A light and refreshing Cucumber Pasta Salad perfect for summer gatherings, featuring turkey bacon for added flavor.

Ingredients

  • 8 ounces pasta of your choice
  • 1 large cucumber, diced
  • 6 slices turkey bacon, cooked and crumbled
  • 1 cup cherry tomatoes, halved
  • 1/4 cup red onion, finely chopped
  • 1/4 cup feta cheese, crumbled
  • 1/4 cup olive oil
  • 2 tablespoons apple cider vinegar
  • 1 teaspoon dried oregano
  • Salt and pepper to taste

Instructions

  1. Cook the pasta according to package instructions. Drain and let cool.
  2. In a large bowl, combine the pasta, cucumber, turkey bacon, cherry tomatoes, red onion, and feta cheese.
  3. In a small bowl, whisk together olive oil, apple cider vinegar, oregano, salt, and pepper.
  4. Pour the dressing over the pasta salad and toss to combine.
  5. Chill in the refrigerator for at least 30 minutes before serving.

Notes

  • This salad can be made a day in advance but hold off on adding the dressing until just before serving for best results.
