Dark Chocolate Raspberry Cheesecake

A rich and creamy dark chocolate raspberry cheesecake that you can easily make at home.

Ingredients

  • 1 ½ cups graham cracker crumbs
  • ½ cup unsalted butter, melted
  • 1 cup granulated sugar
  • 4 packages (8 oz each) cream cheese, softened
  • 1 cup sour cream
  • 1 cup dark chocolate, melted
  • 3 large eggs
  • 2 cups fresh raspberries
  • ¼ cup raspberry sauce

Instructions

  1. Preheat the oven to 325°F (160°C).
  2. In a bowl, combine graham cracker crumbs and melted butter, then press into the bottom of a springform pan.
  3. In a large mixing bowl, beat cream cheese and granulated sugar until smooth.
  4. Add sour cream and melted chocolate, mix until fully incorporated.
  5. Beat in eggs one at a time until just combined.
  6. Fold in the raspberries gently.
  7. Pour the cheesecake mixture over the crust and smooth the top.
  8. Bake for about 60 minutes or until the center is set.
  9. Let it cool, then refrigerate for at least 4 hours before serving.

Notes

  • For added flavor, top with extra fresh raspberries and chocolate shavings.
  • Use a water bath for a creamier texture.
