Easy Chicken Enchilada Recipe

A quick and delicious way to make chicken enchiladas that the whole family will love.

  • 2 cups cooked shredded chicken
  • 1 can red enchilada sauce
  • 1 cup shredded cheese
  • 8 corn tortillas
  • 1 cup black beans
  • 1 diced onion
  • 1 teaspoon cumin
  • 1 teaspoon garlic powder

Instructions

  1. Preheat the oven to 350°F (175°C).
  2. In a bowl, mix the shredded chicken, onion, black beans, cumin, and garlic powder.
  3. Warm the tortillas in a dry skillet for about 30 seconds on each side.
  4. Spread some enchilada sauce on the bottom of a baking dish.
  5. Fill each tortilla with the chicken mixture and roll them up.
  6. Place the rolled tortillas seam side down in the baking dish.
  7. Pour the remaining enchilada sauce on top and sprinkle with cheese.
  8. Bake for 20 minutes until bubbly.

Notes

  • For a spicier dish, add jalapeños to the filling.
  • You can use store-bought rotisserie chicken for convenience.
