- 2 cups cooked shredded chicken
- 1 can red enchilada sauce
- 1 cup shredded cheese
- 8 corn tortillas
- 1 cup black beans
- 1 diced onion
- 1 teaspoon cumin
- 1 teaspoon garlic powder
- Preheat the oven to 350°F (175°C).
- In a bowl, mix the shredded chicken, onion, black beans, cumin, and garlic powder.
- Warm the tortillas in a dry skillet for about 30 seconds on each side.
- Spread some enchilada sauce on the bottom of a baking dish.
- Fill each tortilla with the chicken mixture and roll them up.
- Place the rolled tortillas seam side down in the baking dish.
- Pour the remaining enchilada sauce on top and sprinkle with cheese.
- Bake for 20 minutes until bubbly.
Notes
