  • 1/2 cup breadcrumbs
  • 1/4 cup grated parmesan cheese
  • 1 egg
  • 1 teaspoon dried oregano
  • 2 cloves garlic, minced
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • 1 cup orzo pasta
  • 2 cups chicken broth
  • 1 lemon, zested and juiced
  • 2 tablespoons fresh parsley, chopped

Instructions

  1. Preheat the oven to 400°F (200°C).
  2. In a large bowl, combine the chicken, breadcrumbs, parmesan, egg, oregano, garlic, salt, and pepper.
  3. Form the mixture into meatballs and place them on a baking sheet.
  4. Bake for 20-25 minutes or until cooked through.
  5. Meanwhile, cook the orzo in chicken broth according to package instructions.
  6. Stir in lemon zest and juice into the cooked orzo.
  7. Serve meatballs over a bed of lemon orzo and garnish with parsley.
