- 1 1/2 cups all-purpose flour
- 1 teaspoon baking soda
- 1/2 teaspoon baking powder
- 1 teaspoon ground cinnamon
- 1/2 teaspoon ground nutmeg
- 1/4 teaspoon salt
- 1 cup sugar
- 1/2 cup vegetable oil
- 2 large eggs
- 1 cup pumpkin puree
- 1 teaspoon vanilla extract
- 1/2 cup cream cheese, softened
- 1/4 cup powdered sugar
- Preheat your oven to 350°F (175°C) and line a muffin tin with paper liners.
- In a bowl, mix together flour, baking soda, baking powder, cinnamon, nutmeg, and salt.
- In another large bowl, whisk together sugar, vegetable oil, eggs, pumpkin puree, and vanilla extract until smooth.
- Gradually add the dry ingredients to the wet mixture and stir until just combined.
- In a small bowl, mix the softened cream cheese with powdered sugar until smooth.
- Fill each muffin cup halfway with the batter, add a dollop of the cream cheese mixture, and then top with more batter.
- Bake for 18-20 minutes until a toothpick comes out clean from the center.
