- 2 cups granulated sugar
- ¾ cup unsweetened cocoa powder
- 1 ½ teaspoons baking powder
- 1 ½ teaspoons baking soda
- 1 teaspoon salt
- 2 large eggs
- 1 cup whole milk
- ½ cup vegetable oil
- 2 teaspoons vanilla extract
- 1 cup boiling water
- 1 jar (24 oz) cherry pie filling
- 1 cup heavy whipping cream
- 2 tablespoons powdered sugar
- 1 teaspoon vanilla extract
- Chocolate shavings for garnish
- Preheat the oven to 350°F (175°C) and line a muffin tin with cupcake liners.
- In a large bowl, combine the flour, sugar, cocoa powder, baking powder, baking soda, and salt.
- Add the eggs, milk, oil, and vanilla to the dry ingredients and mix well.
- Slowly mix in the boiling water until the batter is smooth.
- Fill the cupcake liners about 2/3 full with batter and bake for 18-20 minutes.
- Once cooled, make a small hole in the center of each cupcake and fill with cherry pie filling.
- Whip the heavy cream with powdered sugar and vanilla until soft peaks form, then frost the cupcakes.
- Top with chocolate shavings and extra cherry pie filling if desired.
