  • 1/2 cup brown sugar
  • 1/4 cup vegetable oil
  • 2 large eggs
  • 1 teaspoon vanilla extract
  • 1 1/2 cups all-purpose flour
  • 1 teaspoon baking soda
  • 1 teaspoon baking powder
  • 1 teaspoon ground cinnamon
  • 1/2 teaspoon ground nutmeg
  • 1/2 teaspoon salt
  • 1/2 cup chopped walnuts (optional)

Instructions

  1. Preheat your oven to 350°F (175°C) and line a muffin tin with paper liners.
  2. In a large bowl, mix together pumpkin puree, brown sugar, vegetable oil, eggs, and vanilla extract until smooth.
  3. In a separate bowl, combine flour, baking soda, baking powder, cinnamon, nutmeg, and salt.
  4. Gradually add the dry ingredients to the wet mixture, stirring until just combined. Fold in walnuts if using.
  5. Fill the muffin liners about 2/3 full with batter.
  6. Bake for 18-20 minutes, or until a toothpick inserted in the center comes out clean.
  7. Allow to cool for a few minutes in the pan before transferring to a wire rack to cool completely.

Notes

  • For an extra crumb topping, mix together 1/2 cup of oats with 1/4 cup of brown sugar and sprinkle on top before baking.
