- 1/2 cup honey or maple syrup
- 1/4 cup coconut oil, melted
- 2 eggs
- 1 teaspoon vanilla extract
- 1 cup whole wheat flour
- 1 teaspoon baking soda
- 1 teaspoon baking powder
- 1 teaspoon cinnamon
- 1/2 teaspoon nutmeg
- 1/4 teaspoon salt
- 1/2 cup chopped nuts or chocolate chips (optional)
- Preheat the oven to 350°F (175°C) and line a muffin tin with paper liners.
- In a large bowl, mix together the pumpkin puree, honey (or maple syrup), melted coconut oil, eggs, and vanilla extract.
- In another bowl, combine the whole wheat flour, baking soda, baking powder, cinnamon, nutmeg, and salt.
