Instructions

  1. Preheat the oven to 350°F (175°C) and line a muffin tin with liners.
  2. In a mixing bowl, combine pumpkin puree, eggs, maple syrup, coconut oil, and vanilla extract.
  3. In another bowl, mix whole wheat flour, almond flour, baking powder, baking soda, cinnamon, nutmeg, and salt.
  4. Gradually add the dry ingredients to the wet ingredients until combined.
  5. In a small bowl, beat the cream cheese with powdered sugar until smooth.
  6. Fill each muffin cup halfway with the pumpkin batter, then add a spoonful of cream cheese mixture, and top with more pumpkin batter.
  7. Bake for 20-25 minutes or until a toothpick comes out clean.
