Easy Lemon Arugula Pasta Salad

A refreshing and simple salad combining the peppery taste of arugula, turkey bacon, and chicken ham with a zesty lemon dressing.

Ingredients

  • 8 ounces pasta of your choice
  • 4 slices turkey bacon
  • 6 ounces chicken ham, sliced
  • 4 cups arugula
  • 1 lemon, juiced
  • 1/4 cup olive oil
  • Salt to taste
  • Pepper to taste

Instructions

  1. Cook the pasta according to package instructions. Drain and let cool.
  2. In a skillet, cook the turkey bacon until crispy. Remove and crumble.
  3. In a large bowl, combine the cooked pasta, arugula, chicken ham, and crumbled turkey bacon.
  4. In a small bowl, whisk together lemon juice, olive oil, salt, and pepper.
  5. Pour the dressing over the salad and toss to combine.
  6. Serve immediately or chill in the refrigerator for 30 minutes before serving.
