  • ½ teaspoon salt
  • 1 cup granulated sugar
  • ½ cup brown sugar
  • 1 cup canned pumpkin puree
  • ½ cup vegetable oil
  • 4 large eggs
  • 8 ounces cream cheese, softened
  • ¼ cup powdered sugar
  • 1 teaspoon vanilla extract

Instructions

  1. Preheat your oven to 350°F (175°C) and grease a loaf pan.
  2. In a bowl, whisk together the flour, baking soda, baking powder, spices, and salt.
  3. In another bowl, beat together the sugars, pumpkin, oil, and eggs until smooth.
  4. Gradually add the dry ingredients to the wet ingredients, mixing until just combined.
  5. In a separate bowl, mix the cream cheese, powdered sugar, and vanilla until smooth.
  6. Pour half of the pumpkin batter into the prepared loaf pan.
  7. Scoop the cream cheese mixture over the batter followed by the remaining pumpkin batter.
  8. Swirl the batters together with a knife.
  9. Bake for 60-70 minutes or until a toothpick comes out clean.
  10. Let cool before slicing and serving.
