  • 1 cup brown sugar
  • 1/2 cup granulated sugar
  • 1/2 cup unsalted butter, softened
  • 1 large egg
  • 1 teaspoon vanilla extract
  • 1 cup powdered sugar (for icing)
  • 1/4 cup unsalted butter, browned (for icing)
  • 1 tablespoon milk (for icing)

Instructions

  1. Preheat your oven to 350°F (175°C).
  2. In a bowl, mix together the pumpkin puree, butter, brown sugar, and granulated sugar until smooth.
  3. Add the egg and vanilla extract, mixing well.
  4. In another bowl, whisk together the flour, baking soda, baking powder, cinnamon, nutmeg, and salt.
  5. Gradually add the dry ingredients to the wet ingredients, stirring until just combined.
  6. Drop spoonfuls of dough onto a baking sheet lined with parchment paper.
  7. Bake for 12-15 minutes or until the edges are lightly golden.
  8. For the icing, in a saucepan, melt the 1/4 cup of butter until browned. Remove from heat and stir in powdered sugar and milk.
  9. Drizzle the icing over the cooled cookies.
