  • 1 teaspoon ground cinnamon
  • ½ teaspoon ground nutmeg
  • ½ teaspoon salt
  • ½ teaspoon cream of tartar

Instructions

  1. Preheat your oven to 350°F (175°C).
  2. In a bowl, cream together the softened butter and sugar until light and fluffy.
  3. Add in the pumpkin puree, eggs, and vanilla extract and mix well.
  4. In another bowl, combine the flour, baking powder, baking soda, salt, cinnamon, nutmeg, and cream of tartar.
  5. Gradually add the dry ingredients to the wet ingredients, mixing until just combined.
  6. Scoop tablespoons of cookie dough onto a baking sheet lined with parchment paper.
  7. Sprinkle with additional cinnamon sugar if desired.
  8. Bake for 12-15 minutes or until edges are lightly browned.
  9. Let cool on the baking sheet for a few minutes before transferring to a wire rack to cool completely.
