Instructions

  1. Preheat the oven to 350°F (175°C).
  2. In a bowl, mix together the pumpkin puree, sugar, brown sugar, butter, egg, and vanilla until well combined.
  3. In another bowl, whisk together the flour, baking soda, baking powder, pumpkin pie spice, and salt.
  4. Gradually add the dry ingredients to the wet ingredients, mixing until just combined.
  5. Drop spoonfuls of the dough onto a baking sheet lined with parchment paper.
  6. Bake for 12-15 minutes, or until the edges are set.
  7. Allow to cool on the baking sheet for a few minutes before transferring to a wire rack to cool completely.
