  • 2 pounds baby potatoes
  • 4 slices turkey bacon
  • 2 tablespoons olive oil
  • 1 teaspoon garlic powder
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 2 tablespoons chopped fresh parsley

Instructions

  1. Preheat your oven to 450°F (230°C).
  2. Boil the potatoes in salted water until fork-tender, about 15-20 minutes.
  3. Drain the potatoes and let them cool slightly.
  4. Place the potatoes on a baking sheet and gently smash them with a fork or potato masher.
  5. In a small pan, cook the turkey bacon until crispy, then chop it into bits.
  6. Drizzle olive oil over the smashed potatoes and season with garlic powder, salt, and pepper.
  7. Bake in the oven for 20-25 minutes until golden and crispy.
