  • 4 cups chicken broth
  • 2 cups cooked chicken, shredded
  • 1 cup frozen peas
  • 1 cup heavy cream
  • 1 tablespoon dried thyme
  • 1 tablespoon salt
  • 1/2 teaspoon black pepper
  • 1/4 cup flour (for thickening)
  • 2 cups pie crust, optional

Instructions

  1. In a large pot, cook the turkey bacon over medium heat until crispy. Remove and chop.
  2. In the same pot, add carrots, celery, onion, and garlic. Sauté until soft.
  3. Add chicken broth, shredded chicken, and peas. Stir to combine.
  4. Mix in heavy cream and bring to a simmer.
  5. Add thyme, salt, and pepper. Stir well.
  6. If using, sprinkle flour to thicken the soup, mixing until desired consistency is reached.
  7. Serve hot, optionally topped with pie crust pieces.

  • This soup can be made ahead and freezes well.
