- 1 pound turkey bacon
- 1 cup diced carrots
- 1 cup diced celery
- 1 medium onion, chopped
- 3 cloves garlic, minced
- 4 cups chicken broth
- 2 cups cooked chicken, shredded
- 1 cup frozen peas
- 1 cup heavy cream
- 1 tablespoon dried thyme
- 1 tablespoon salt
- 1/2 teaspoon black pepper
- 1/4 cup flour (for thickening)
- 2 cups pie crust, optional
- In a large pot, cook the turkey bacon over medium heat until crispy. Remove and chop.
- In the same pot, add carrots, celery, onion, and garlic. Sauté until soft.
- Add chicken broth, shredded chicken, and peas. Stir to combine.
- Mix in heavy cream and bring to a simmer.
- Add thyme, salt, and pepper. Stir well.
- If using, sprinkle flour to thicken the soup, mixing until desired consistency is reached.
