- 1 pound chicken breasts
- 1 cup white rice
- 4 cups chicken broth
- 1 cup carrots, diced
- 1 cup celery, diced
- 1 onion, chopped
- 2 cloves garlic, minced
- 1 teaspoon salt
- 1/2 teaspoon black pepper
- 1 teaspoon dried thyme
- 1 teaspoon dried parsley
- 1 bay leaf
- Place the chicken breasts at the bottom of the Crockpot.
- Add the rice, chicken broth, carrots, celery, onion, garlic, salt, pepper, thyme, parsley, and bay leaf on top of the chicken.
- Cover and cook on low for 6-8 hours or high for 3-4 hours.
- Once cooked, shred the chicken in the pot and stir to combine.
- Remove the bay leaf before serving.
Notes
- This recipe can easily be doubled for larger groups.
- Feel free to add other vegetables as desired.
