Ingredients

  • 1 tablespoon olive oil
  • 1 onion, chopped
  • 2 carrots, diced
  • 2 celery stalks, diced
  • 1 ham bone or 1 cup diced ham
  • 6 cups chicken broth
  • 1/2 teaspoon thyme
  • 1/2 teaspoon black pepper
  • 1/4 teaspoon salt

Instructions

  1. In a large pot, heat the olive oil over medium heat.
  2. Add the onion, carrots, and celery, sauté until soft.
  3. Add the split peas, ham bone, chicken broth, thyme, pepper, and salt; bring to a boil.
  4. Reduce heat, cover, and simmer for about 1 hour or until peas are tender.
  5. If using a ham bone, remove it after cooking, shred the meat, and return it to the pot.
  6. Blend the soup with an immersion blender to your desired consistency.
  7. Serve hot and enjoy!

Notes

  • For extra flavor, add garlic and bay leaves while cooking.
  • This soup can be thickened by blending more or less of it.
