- 3 parsnips, peeled and chopped
- 1 onion, diced
- 2 carrots, diced
- 2 cloves garlic, minced
- 4 slices turkey bacon, chopped
- 4 cups vegetable broth
- 1 teaspoon ground cumin
- 1 teaspoon ground coriander
- Salt to taste
- Pepper to taste
- 2 tablespoons olive oil
- In a large pot, heat the olive oil over medium heat. Add the turkey bacon and cook until crispy.
- Add the chopped parsnips, onion, and carrots. Sauté for about 5-7 minutes until softened.
- Stir in the minced garlic, cumin, and coriander; cook for an additional minute.
- Pour in the vegetable broth and bring to a boil. Reduce heat and simmer for 20-25 minutes until the parsnips are tender.
- Use an immersion blender to purée the soup until smooth. If using a regular blender, allow it to cool slightly before blending in batches.

Notes
