- 1 pound boneless, skinless chicken breasts
- 4 cups chicken broth
- 1 cup carrots, sliced
- 1 cup celery, chopped
- 1 onion, diced
- 2 cloves garlic, minced
- 1 lemon, juiced
- 1 teaspoon dried thyme
- 1 teaspoon salt
- 1/2 teaspoon black pepper
- Place the chicken breasts in the bottom of the crockpot.
- Pour in the chicken broth and add carrots, celery, onion, and garlic.
- Stir in lemon juice, thyme, salt, and pepper.
- Cover and cook on low for 6-8 hours or until chicken is cooked through.
- Remove chicken, shred it, and return it to the soup.
- Serve warm.
