  • 1 bay leaf
  • Salt and pepper to taste
  • 1 loaf French bread
  • 2 cups shredded Gruyère cheese

Instructions

  1. Season the beef short ribs with salt and pepper.
  2. In a large pot, heat olive oil over medium heat and brown the ribs on all sides.
  3. Add sliced onions and garlic, cooking until caramelized.
  4. Pour in the wine, scraping up any browned bits from the bottom of the pot.
  5. Add beef broth, thyme, and bay leaf; bring to a simmer.
  6. Cover and cook on low for 2-3 hours until the beef is tender.
  7. Slice the French bread and toast until golden.
  8. Serve the soup in bowls, topped with toasted bread and shredded Gruyère cheese.
