  • 1 medium butternut squash
  • 4 slices turkey bacon
  • 1 medium onion, chopped
  • 2 cloves garlic, minced
  • 4 cups vegetable broth
  • 1 teaspoon ground cumin
  • 1/2 teaspoon nutmeg
  • Salt to taste
  • 1/4 cup heavy cream

Instructions

  1. Preheat the oven to 400°F (200°C).
  2. Cut the butternut squash in half, scoop out the seeds, and place it cut-side down on a baking sheet. Roast for 40-50 minutes until tender.
  3. In a large pot, cook the turkey bacon over medium heat until crispy. Remove and crumble.
  4. Add onion and garlic to the pot, sauté until translucent.
  5. Once the squash is done, scoop the flesh into the pot. Add vegetable broth, cumin, nutmeg, and salt.
  6. Bring to a boil, then reduce heat and simmer for 15 minutes.
  7. Blend the soup until smooth. Stir in the heavy cream and crumbled turkey bacon.
  8. Serve warm, garnished with additional bacon if desired.

Notes

  • For added texture, top with roasted pumpkin seeds.
  • This soup can be made a day ahead and reheated.
