- 1 medium butternut squash
- 4 slices turkey bacon
- 1 medium onion, chopped
- 2 cloves garlic, minced
- 4 cups vegetable broth
- 1 teaspoon ground cumin
- 1/2 teaspoon nutmeg
- Salt to taste
- 1/4 cup heavy cream
- Preheat the oven to 400°F (200°C).
- Cut the butternut squash in half, scoop out the seeds, and place it cut-side down on a baking sheet. Roast for 40-50 minutes until tender.
- In a large pot, cook the turkey bacon over medium heat until crispy. Remove and crumble.
- Add onion and garlic to the pot, sauté until translucent.
- Once the squash is done, scoop the flesh into the pot. Add vegetable broth, cumin, nutmeg, and salt.
- Bring to a boil, then reduce heat and simmer for 15 minutes.
- Blend the soup until smooth. Stir in the heavy cream and crumbled turkey bacon.
- Serve warm, garnished with additional bacon if desired.
