  • 1 pound boneless, skinless chicken breasts
  • 2 tablespoons olive oil
  • 1 onion, diced
  • 2 cloves garlic, minced
  • 1 can (10 ounces) green enchilada sauce
  • 1 can (15 ounces) diced tomatoes
  • 1 can (15 ounces) black beans, drained and rinsed
  • 4 cups chicken broth
  • 1 teaspoon cumin
  • 1 teaspoon chili powder
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • 1 cup corn (frozen or canned)

Instructions

  1. In a large pot, heat the olive oil over medium heat.
  2. Add the diced onion and cook until translucent, about 5 minutes.
  3. Add the minced garlic and cook for an additional minute.
  4. Stir in the chicken breasts and cook until browned on both sides, about 5-7 minutes.
  5. Remove the chicken, shred it, and set aside.
  6. Add the green enchilada sauce, diced tomatoes, black beans, chicken broth, cumin, chili powder, salt, and black pepper to the pot. Bring to a boil.
  7. Add the shredded chicken back into the pot.
  8. Reduce the heat and add the corn. Simmer for 20 minutes.
  9. Serve hot, garnished with your choice of toppings.

Notes

  • For a spicier soup, add diced jalapeños or cayenne pepper.
  • Top with avocado, cheese, or fresh cilantro for added flavor.
