- 4 slices turkey bacon
- 1 tablespoon olive oil
- 1 onion, diced
- 3 cloves garlic, minced
- 1 teaspoon dried oregano
- 1 teaspoon dried basil
- 6 cups chicken broth
- 1 can (15 ounces) crushed tomatoes
- 8 ounces lasagna noodles, broken into pieces
- 1 cup ricotta cheese
- 1 cup shredded mozzarella cheese
- 1/2 cup grated Parmesan cheese
- 2 cups fresh spinach
- Salt and pepper to taste
- In a large pot, cook the turkey bacon over medium heat until crispy. Remove and crumble.
- Add olive oil, diced onion, and minced garlic to the pot. Sauté until onion is translucent.
- Stir in oregano and basil, cooking for an additional minute.
- Add chicken broth and crushed tomatoes, bringing to a simmer.
- Add broken lasagna noodles and cook until tender.
- Stir in ricotta, mozzarella, Parmesan, spinach, and crumbled turkey bacon. Mix until cheeses melt.
- Season with salt and pepper to taste before serving.
