  • 1 medium butternut squash
  • 1 tablespoon olive oil
  • 1 onion, chopped
  • 2 cloves garlic, minced
  • 4 cups vegetable broth
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1/2 teaspoon nutmeg
  • 1 cup cooked lentils
  • 1/2 cup coconut milk

Instructions

  1. Preheat your oven to 400°F (200°C).
  2. Cut the butternut squash in half, scoop out the seeds, and place it on a baking sheet, cut side down. Roast for about 30-35 minutes until tender.
  3. In a large pot, heat olive oil over medium heat. Add the chopped onion and garlic; sauté until softened.
  4. Once the butternut squash is roasted, scoop out the flesh and add it to the pot with the sautéed onion and garlic.
  5. Pour in the vegetable broth, salt, pepper, and nutmeg. Bring to a simmer and cook for 10 minutes.
  6. Blend the soup until smooth, then stir in the cooked lentils and coconut milk. Heat through before serving.

Notes

  • For extra flavor, add a splash of lemon juice before serving.
