- 1 medium butternut squash
- 1 tablespoon olive oil
- 1 onion, chopped
- 2 cloves garlic, minced
- 4 cups vegetable broth
- 1 teaspoon salt
- 1/2 teaspoon black pepper
- 1/2 teaspoon nutmeg
- 1 cup cooked lentils
- 1/2 cup coconut milk
- Preheat your oven to 400°F (200°C).
- Cut the butternut squash in half, scoop out the seeds, and place it on a baking sheet, cut side down. Roast for about 30-35 minutes until tender.
- In a large pot, heat olive oil over medium heat. Add the chopped onion and garlic; sauté until softened.
- Once the butternut squash is roasted, scoop out the flesh and add it to the pot with the sautéed onion and garlic.
- Pour in the vegetable broth, salt, pepper, and nutmeg. Bring to a simmer and cook for 10 minutes.
- Blend the soup until smooth, then stir in the cooked lentils and coconut milk. Heat through before serving.
Notes
- For extra flavor, add a splash of lemon juice before serving.
- You can top with croutons or roasted seeds for added crunch.
