  • 8 cups beef broth

  • 1 teaspoon thyme
  • 1 bay leaf
  • 1 cup grated Gruyère cheese
  • 1 tablespoon fresh parsley, chopped
  • 8 slices French bread

Instructions

  1. Melt butter in a skillet over medium heat. Add the onions and cook until caramelized, about 15-20 minutes.
  2. Transfer the onions to a slow cooker and add the beef broth, salt, pepper, thyme, and bay leaf. Stir to combine.
  3. Cover and cook on low for 6-8 hours or high for 3-4 hours.
  4. Before serving, toast the French bread slices and top each bowl of soup with cheese and bread.
  5. Broil until the cheese is bubbly and golden brown.
  6. Garnish with fresh parsley and serve hot.
