  • 1 pound boneless, skinless chicken thighs
  • 1 tablespoon olive oil
  • 2 teaspoons garam masala
  • 1 teaspoon ground cumin
  • 1 teaspoon ground coriander
  • 1/2 teaspoon turmeric
  • 1/2 teaspoon cayenne pepper
  • 1 medium onion, chopped
  • 3 cloves garlic, minced
  • 1 inch ginger, grated
  • 1 can (15 oz) diced tomatoes
  • 1 cup coconut milk
  • Salt to taste
  • Fresh cilantro for garnish

Instructions

  1. Heat the olive oil in a skillet over medium heat.
  2. Add the onions, garlic, and ginger, and sauté until the onions are translucent.
  3. Stir in the spices (garam masala, cumin, coriander, turmeric, cayenne) and cook for an additional minute.
  4. Transfer the mixture to a slow cooker and add the chicken, diced tomatoes, coconut milk, and salt.
  5. Cook on low for 6-8 hours or on high for 3-4 hours, until the chicken is tender.
  6. Shred the chicken with two forks and mix well with the sauce.
  7. Garnish with fresh cilantro before serving.

  • You can adjust the spice level by adding more or less cayenne pepper.
