Easy Summer Meals Ideas : Easy Stuffed Bell Peppers

  • 4 bell peppers
  • 1 pound ground turkey
  • 4 slices turkey bacon, chopped
  • 1 cup cooked rice
  • 1/2 cup diced onion
  • 2 cloves garlic, minced
  • 1 cup shredded cheese
  • 2 tablespoons olive oil
  • 1 teaspoon paprika
  • Salt and pepper to taste

Instructions

  1. Preheat the oven to 375°F (190°C).
  2. Cut the tops off the bell peppers and remove seeds.
  3. In a skillet, heat olive oil over medium heat and cook onions and garlic until soft.
  4. Add ground turkey and turkey bacon, cooking until the turkey is browned.
  5. Stir in the cooked rice, paprika, salt, and pepper.
  6. Fill each bell pepper with the turkey mixture and top with shredded cheese.
  7. Place the filled peppers in a baking dish and cover with foil.
  8. Bake for 25-30 minutes, removing the foil for the last 10 minutes.
