Easy Summer Meals Ideas : Slow Cooker Stuffed Bell Peppers

Delicious and easy summer meal idea featuring slow cooker stuffed bell peppers.

  • 4 large bell peppers
  • 1 pound ground beef
  • 1 cup cooked rice
  • 1 can diced tomatoes
  • 1 teaspoon garlic powder
  • 1 teaspoon onion powder
  • 1 teaspoon Italian seasoning
  • 1 cup shredded cheese

Instructions

  1. Cut the tops off the bell peppers and remove the seeds.
  2. In a bowl, mix ground beef, cooked rice, diced tomatoes, garlic powder, onion powder, and Italian seasoning.
  3. Stuff the bell peppers with the mixture and place them in the slow cooker.
  4. Cook on low for 6-8 hours or until the beef is fully cooked.
  5. During the last 15 minutes, sprinkle cheese on top of the stuffed peppers and cover until melted.

Notes

  • Feel free to substitute ground beef with turkey or a plant-based alternative.
  • For added flavor, mix in some chopped onions or peppers into the meat mixture.
