  • 1 pound turkey bacon, chopped
  • 1 pound chicken ham, diced
  • 1 large onion, diced
  • 1 green bell pepper, diced
  • 3 cloves garlic, minced
  • 4 cups chicken broth
  • 1 can diced tomatoes, undrained
  • 2 teaspoons Cajun seasoning
  • 1 teaspoon paprika
  • 1/2 teaspoon black pepper
  • 1/2 teaspoon cayenne pepper (optional)
  • 1 cup frozen shrimp (optional)

Instructions

  1. In a slow cooker, add the turkey bacon, chicken ham, onion, bell pepper, and garlic. Stir to combine.
  2. Add the rice, chicken broth, diced tomatoes, Cajun seasoning, paprika, black pepper, and cayenne pepper (if using). Mix well.
  3. Cover and cook on low for 4-6 hours or until rice is tender.
  4. If using shrimp, add them during the last 30 minutes of cooking.
