Easy Thai Chicken Curry Soup

  • 1 tablespoon vegetable oil
  • 1 pound chicken breast, diced
  • 2 cups coconut milk
  • 2 cups chicken broth
  • 2 tablespoons red curry paste
  • 1 tablespoon fish sauce
  • 1 tablespoon lime juice
  • 1 cup bell peppers, sliced
  • 1 cup carrots, sliced
  • 1 cup mushrooms, sliced
  • 1/4 cup fresh cilantro, chopped

Instructions

  1. Heat the vegetable oil in a pot over medium heat.
  2. Add the diced chicken and cook until browned.
  3. Stir in the red curry paste and cook for another 2 minutes.
  4. Add the coconut milk and chicken broth, and bring to a simmer.
  5. Stir in the fish sauce, lime juice, bell peppers, carrots, and mushrooms.
  6. Simmer for 15-20 minutes until the vegetables are tender.
  7. Garnish with fresh cilantro before serving.

Notes

  • Adjust the spice level by adding more or less curry paste.
  • For a vegetarian option, substitute chicken with tofu and use vegetable broth.
