  • 1/2 teaspoon baking powder
  • 1/2 teaspoon baking soda
  • 1/4 teaspoon salt
  • 1/2 cup unsalted butter, softened
  • 3/4 cup granulated sugar
  • 2 large eggs
  • 1 teaspoon vanilla extract
  • 1 cup eggnog
  • 1/2 teaspoon nutmeg, freshly grated

Instructions

  1. Preheat the oven to 350°F (175°C) and line a cupcake pan with paper liners.
  2. In a large mixing bowl, whisk together the flour, baking powder, baking soda, and salt.
  3. In another bowl, cream the butter and sugar until light and fluffy.
  4. Add the eggs and vanilla extract, mixing until combined.
  5. Gradually add the dry ingredients, alternating with the eggnog, starting and ending with the dry ingredients.
  6. Fold in the grated nutmeg.
  7. Fill each cupcake liner about two-thirds full with the batter.
  8. Bake for 18-20 minutes or until a toothpick inserted in the center comes out clean.
  9. Allow to cool completely before frosting.

Notes

  • For an extra festive touch, top cupcakes with whipped cream and a sprinkle of nutmeg.
  • These cupcakes can be made a day in advance; just store them in an airtight container.
