Ingredients

  • 2 large eggplants
  • 1 cup ricotta cheese
  • 2 cups marinara sauce
  • 1 cup shredded mozzarella cheese
  • 1/4 cup grated Parmesan cheese
  • 1 egg
  • 2 tablespoons fresh basil, chopped
  • 1 teaspoon garlic powder

Instructions

  1. Preheat the oven to 375°F (190°C).
  2. Slice the eggplants lengthwise and roast them on a baking sheet for 15 minutes.
  3. In a bowl, mix the ricotta cheese, egg, basil, garlic powder, and half of the Parmesan cheese.
  4. Spread a layer of marinara sauce on the bottom of a baking dish.
  5. Fill each roasted eggplant slice with the ricotta mixture and roll it up.
  6. Place the rolls in the baking dish seam-side down and top with remaining marinara sauce and mozzarella cheese.
  7. Bake for 25-30 minutes until the cheese is bubbly and golden.

Notes

  • For extra flavor, add spinach or herbs to the ricotta mixture.
  • Serve with a side salad for a complete meal.
