- 2 large eggplants
- 1 cup ricotta cheese
- 2 cups marinara sauce
- 1 cup shredded mozzarella cheese
- 1/4 cup grated Parmesan cheese
- 1 egg
- 2 tablespoons fresh basil, chopped
- 1 teaspoon garlic powder
- Preheat the oven to 375°F (190°C).
- Slice the eggplants lengthwise and roast them on a baking sheet for 15 minutes.
- In a bowl, mix the ricotta cheese, egg, basil, garlic powder, and half of the Parmesan cheese.
- Spread a layer of marinara sauce on the bottom of a baking dish.
- Fill each roasted eggplant slice with the ricotta mixture and roll it up.
- Place the rolls in the baking dish seam-side down and top with remaining marinara sauce and mozzarella cheese.
- Bake for 25-30 minutes until the cheese is bubbly and golden.
