Fall Pumpkin Chocolate Chip : Chocolate Pumpkin Butter Cups (Dairy-Free)

Delicious and indulgent dairy-free butter cups infused with the flavors of fall featuring pumpkin and chocolate.

Ingredients

  • 1 cup dairy-free chocolate chips
  • 1/2 cup pumpkin puree
  • 1/4 cup maple syrup
  • 1/4 cup coconut oil
  • 1 teaspoon vanilla extract
  • 1/2 teaspoon pumpkin pie spice
  • 1/4 teaspoon salt

Instructions

  1. In a saucepan, melt the coconut oil and chocolate chips over low heat until smooth.
  2. Remove from heat and stir in the pumpkin puree, maple syrup, vanilla extract, pumpkin pie spice, and salt until well combined.
  3. Pour the mixture into mini cupcake liners and freeze until set, about 1 hour.
  4. Remove from liners and serve chilled or at room temperature.

Notes

  • For added texture, consider mixing in chopped nuts or dairy-free chocolate chunks.
  • You can substitute the pumpkin puree with sweet potato puree for a different flavor profile.
