- 2 tablespoons olive oil
- 1 large onion, sliced
- 3 cloves garlic, minced
- 4 cups beef broth
- 1 teaspoon dried thyme
- 1 teaspoon salt

- 1 cup heavy cream
- 1 cup shredded Gruyère cheese
