  • 1 pound shrimp, peeled and deveined
  • 1 tablespoon olive oil
  • 1 avocado, diced
  • 1 cup corn, fresh or frozen
  • 2 garlic cloves, minced
  • 1/2 cup sour cream
  • 1 tablespoon lime juice
  • 1/4 cup cilantro, chopped
  • Salt to taste

Instructions

  1. Preheat the grill to medium heat.
  2. In a bowl, combine shrimp, olive oil, garlic, and salt; toss to coat.
  3. Place shrimp on the grill and cook for 3-4 minutes on each side until opaque.
  4. In another bowl, mix avocado, corn, lime juice, and cilantro.
  5. To make the creamy garlic sauce, mix sour cream with minced garlic and additional lime juice.
  6. Assemble the bowl by placing grilled shrimp on a bed of corn salsa and drizzle with creamy garlic sauce.
